Buffalo Chicken in 3 Easy Steps with French’s Crunch Time Entrées

French’s sent me some of their Crunch Time Entrées to try out. My favorite was the buffalo chicken flavor, since I love hot sauce and all things spicy.

The Crunch Time Entrées come with the breading and sauce. You will also need an egg (lightly beaten), 2 tablespoons of flour (add to the breading), and 1.5 pounds of chicken breast (cut into strips).

The three steps are easy: coat it, bake it, and top it.

Some notes….

I used chicken tenderloins that I cut into two. I wanted them to be about the size of chicken nuggets, so they’d be more appealing to Baby J (the boy loves chicken nuggets).

Also, in the photos below, I’ve halved the recipe. Hubby is still away for Navy training, so it’s just Baby J and I. Half of the bread crumbs and half of the sauce went into jars that I refrigerated (well, the sauce, not the crumbs) for a later meal.

Finally, I left the sauce off a few of the chicken pieces, because I knew the buffalo sauce would probably be too hot for Baby J.

Simple, isn’t it? It was delicious too. Yes, I like to cook from scratch, but I like the idea of keeping a couple of Crunch Time Entrées in the pantry to have on hand for last-minute meals.

Eat more veggies! Try Garden Lites Veggie Muffins

I’m always searching for healthy snacks for my son and me, usually for food that’s quick to prepare and easy to take with us on the go. Whenever I find something interesting on store shelves, I check the back label, looking for minimal ingredients and plenty of nutrition. Recently, I received several boxes of Garden Lites Veggie Muffins to review. I was pleasantly surprised by the ingredient label and the taste!

Baby J and I tried out the following flavors:

  • Veggie blueberry oat
  • Zucchini banana chocolate chip
  • Zucchini chocolate
  • Carrot berry
  • Golden corn

The muffins arrived at our door tucked away with ice packs inside a styrofoam cooler box. Baby J and the cats, of course, immediately thought there had to be something incredibly awesome in a box like that. If my memory serves me correctly, Baby J’s words were, “Oh woooow!”

Keep the muffins frozen, until you’re ready to eat them. I would assume this is how the company avoids filling them with preservatives.

To eat, leave the frozen muffins inside their individual packaging and heat them in your microwave for about 35 seconds. They’ll be a little hot at that point, but soon afterwards cooled enough to eat. It’s also fine to toss them in the fridge and let them defrost. Then you only have to put them in the microwave for about 10 seconds.

One morning I also tossed a frozen muffin in the diaper bag when I knew we’d be gone all day running errands. By late afternoon, it was defrosted enough to eat, but I didn’t enjoy the texture. It’s edible, but these definitely taste better heated up.

The zucchini chocolate veggie muffins were my least favorite, but Baby J loved them. He’s more of a chocolate fan than I am. I liked the veggie blueberry oat muffins the best. Here’s the ingredient list:

Zucchini, Pasteurized Egg Whites, Evaporated Cane Juice, Pasteurized Whole Eggs, Blueberries, Soluble Corn Fiber, Certified Gluten Free Oats, Sorghum Flour, Brown Rice Flour, Corn Starch, Dried Blueberries (blueberries, sugar, sunflower oil), Certified Gluten Free Oat Flour, Carrot, Canola Oil, Baking Powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, monocalcium phosphate), Blueberry Flakes (blueberries, cane sugar, natural blueberry flavor), Salt, Vanilla Extract.

Not bad at all! I love that the first ingredient is zucchini. The other muffin flavors have similar ingredient lists too. These muffins really are packed with veggies, and each muffin is only 120 calories with 0 trans fat.

In the fall and early winter, I bake muffins that I like to call “Harvest Muffins.” The ingredients change, but I always keep them filled with veggies and fruits like squash, carrots, beets, and apples. Although making something fresh at home is usually the cheapest way to go, I can’t deny the convenience of keeping a pack of these individually-wrapped healthy veggie muffins in the freezer. We have a couple of muffins left in the freezer, but when we’re out of them, I will buy more.

Garden Lites Veggie Muffins are sold at numerous retailers, like Whole Foods, Publix, and The Fresh Market. Flavor variety and availability will vary.

Did you know that Puerto Rico has 270 miles of coastline? The Travel Channel has even featured Puerto Rico in its list of the Top 10 Beaches. Specifically, Flamenco Beach is often cited as one of the most beautiful beaches in the world.

At night, visit the Bioluminescent Bay by boat or kayak and watch as beautiful micro-organisms light up the water around you.

El Yunque National Forest is the only tropical rain forest under the U.S. Forest Service. There are 24 miles of recreational hiking trails in El Yunque, including the popular La Mina Trail and the El Yunque trail. The first takes you to a gorgeous waterfall and pool you can swim in, and the second takes you to the Dwarf Forest. I haven’t made it up there, but I’ve been told it’s so high, that there are clouds around you.

If you’re a more adventurous type, you may love the caverns in Camuy. The world’s third largest subterranean river runs through them.

Are you a history buff? If so, you absolutely must visit Old San Juan! The forts there are several hundred years old and massive. The battlements have been designated not only a National Historic Landmark, but also a World Heritage Site.

Here I am at one of the forts. See how high those walls are?!

Outside the forts, the city and streets themselves have gorgeous, old, historic structures. It’s not uncommon to walk down a cobblestone street and have each house you pass painted in a different, vibrant color. San Juan is truly a colorful city.

And never fear…they have a Starbucks!

The authentic Puerto Rican food is amazing. My favorites include fried plantains, pastelillo (like an empanada), and rice and beans. If you enjoy seafood, try the fresh-caught fish. I’ve also heard the local rum is good, but as I’m not a drinker, I couldn’t say for sure!
