Eat more veggies! Try Garden Lites Veggie Muffins

I’m always searching for healthy snacks for my son and me, usually for food that’s quick to prepare and easy to take with us on the go. Whenever I find something interesting on store shelves, I check the back label, looking for minimal ingredients and plenty of nutrition. Recently, I received several boxes of Garden Lites Veggie Muffins to review. I was pleasantly surprised by the ingredient label and the taste!

 Garden Lites Veggie Muffins- My Life: A Work in Progress

Baby J and I tried out the following flavors:

  • Veggie blueberry oat
  • Zucchini banana chocolate chip
  • Zucchini chocolate
  • Carrot berry
  • Golden corn

The muffins arrived at our door tucked away with ice packs inside a styrofoam cooler box. Baby J and the cats, of course, immediately thought there had to be something incredibly awesome in a box like that. If my memory serves me correctly, Baby J’s words were, “Oh woooow!”

Keep the muffins frozen, until you’re ready to eat them. I would assume this is how the company avoids filling them with preservatives.

To eat, leave the frozen muffins inside their individual packaging and heat them in your microwave for about 35 seconds. They’ll be a little hot at that point, but soon afterwards cooled enough to eat. It’s also fine to toss them in the fridge and let them defrost. Then you only have to put them in the microwave for about 10 seconds.

One morning I also tossed a frozen muffin in the diaper bag when I knew we’d be gone all day running errands. By late afternoon, it was defrosted enough to eat, but I didn’t enjoy the texture. It’s edible, but these definitely taste better heated up.

The zucchini chocolate veggie muffins were my least favorite, but Baby J loved them. He’s more of a chocolate fan than I am. I liked the veggie blueberry oat muffins the best. Here’s the ingredient list:

Zucchini, Pasteurized Egg Whites, Evaporated Cane Juice, Pasteurized Whole Eggs, Blueberries, Soluble Corn Fiber, Certified Gluten Free Oats, Sorghum Flour, Brown Rice Flour, Corn Starch, Dried Blueberries (blueberries, sugar, sunflower oil), Certified Gluten Free Oat Flour, Carrot, Canola Oil, Baking Powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, monocalcium phosphate), Blueberry Flakes (blueberries, cane sugar, natural blueberry flavor), Salt, Vanilla Extract.

Not bad at all! I love that the first ingredient is zucchini. The other muffin flavors have similar ingredient lists too. These muffins really are packed with veggies, and each muffin is only 120 calories with 0 trans fat.

Garden Lites Veggie Muffins- My Life: A Work in Progress

In the fall and early winter, I bake muffins that I like to call “Harvest Muffins.” The ingredients change, but I always keep them filled with veggies and fruits like squash, carrots, beets, and apples. Although making something fresh at home is usually the cheapest way to go, I can’t deny the convenience of keeping a pack of these individually-wrapped healthy veggie muffins in the freezer. We have a couple of muffins left in the freezer, but when we’re out of them, I will buy more.

Garden Lites Veggie Muffins are sold at numerous retailers, like Whole Foods, Publix, and The Fresh Market. Flavor variety and availability will vary.

Pretzel ROLO Hearts #ValentinesDay #KidFriendly

These pretzel ROLO hearts are fun and easy to make…so easy, that your kids can help! Each “heart” is made from a pretzel, ROLO chocolate, frosting, and sprinkles. Toddlers can help by placing the chocolates on top the pretzels. Older children can add the frosting, and everyone can enjoy sprinkling their creations with Valentine’s Day colors.

Supplies:

  • parchment paper
  • heart shaped pretzels*
  • frosting
  • sprinkles (red or pink)
  • ROLO chocolate

*I used mini pretzels by Snyder’s of Hanover. These pretzels are more heart shaped than other brands, and they also are thick, so they hold onto their shape even when the chocolate melts.

Turn the oven to 350 degrees. Cut and place a piece of parchment paper on a cookie sheet.

Arrange your pretzels on top of the sheet and parchment paper. How many pretzels you need depends on how many ROLOs you buy.

Next, place one ROLO on the center of each pretzel. When your oven is heated, put the pretzels in for about 5 minutes.

You want the ROLOs to melt. If they melt too much, and the caramel starts to spread out away from the pretzel (like in the photo below), that’s fine. Just wait for the hearts to cool; then you can break the caramel parts off, leaving your hearts intact.

Once your hearts are out of the oven, wait for them to cool. The melted ROLOs will have a circular indentation in the top. Fill these with your frosting. I used a cream cheese cookie icing that came in a squeeze pouch.

Before your frosting hardens, sprinkle your sprinkles over top.

And you’re done! Just wait a few minutes before eating, to make sure that the chocolate and frosting have completely hardened.

Review: Squeez’Ems by BooginHead #toddlerapproved

It’s no secret I’m a fan of reusable squeeze pouches for kids (and adults too). They’re eco-friendly because they eliminate waste, and since you’re filling the pouch yourself, you know exactly what’s going into it.

BooginHead sent me a 2-pack of their Squeez’Ems to review.

The Squeez’Ems I received are designed a little differently than other reusable food pouches I’ve tried or seen on the market. BooginHead also does sell the typical zipper-pouch style (think Ziploc), if that’s what you’re looking for.

The design I’m reviewing here has plastic parts that screw together, instead of the “zipper.” The pouches are free of BPA, PVC, and phthalates. Each pouch functions as a one piece design to eliminate lost parts. The cap is attached to the rest of the pouch. Squeez’Ems are freezer and microwave safe. You can even wash the pouches on the top rack of the dishwasher (although, hand washing is recommended for longevity). Each pouch holds approximately 6 ounces of pureed food.

I went ahead and washed one pouch in the dishwasher, just to make sure it wasn’t going to fall apart. It didn’t, so no issues there. From that point on, I have hand washed the pouches; I do want them to last. I recommend rinsing out your pouch as soon as possible. If you’re not able to get to it right away, soak the inside with water for an hour or so before washing. I use a bottle brush to wash.

The easiest way to fill these pouches is to use a funnel. I have a small, collapsible funnel from Target that I bought for a few dollars. I’ve also filled the Squeez’Ems without a funnel, and just used a long-handled baby spoon. A regular spoon would work too, but my goal was to make the least amount of mess possible, of course.

Squeez’Ems are easy to use with any pureed foods. We’ve used ours with apple sauce, yogurt blends, baby cereal, and mashed banana. I’ve given a pouch to Baby J as a breakfast when I was busy. Of course the pouches should only be used under adult supervision, but even so, I didn’t have to worry about an enormous mess when Baby J was eating baby cereal from his Squeez’Ems. Clean up is much easier!

The Squeez’Ems pouches are also good for snacking on the go. In the summer, I’ll probably either have to place the pouch in a freezer container with an ice pack, or I’ll have to freeze the pouch contents ahead of time and let it thaw in the diaper bag. During the winter, I don’t have to worry about the contents getting too warm. I just toss the pouch into the diaper bag, and on we go! It’s great for my morning jogs outside. Baby J easily eats his breakfast from a Squeez’Ems while sitting in the jogging stroller.
