One-dish dinners: Sweet & Sour Chicken over Brown Rice

Recently I asked my readers on Facebook what their favorite one-dish meals were. I love one-dish meals, because I generally find them less-complicated to make (I’m not a great cook). You can often throw the ingredients together and then leave the dish alone to cook. They’re also a great way to get your veggies in without eating salad (I really don’t like salad…I’ve eaten too many while “dieting”).

I have my friend Joy to thank for this recipe! This recipe is simple and very customizable, so you can fit it to your family’s taste.

Ingredients:

  • About 3 lbs. chicken or pork
  • Olive Oil
  • Soy Sauce
  • Pineapple Chunks or Tidbits (unsweetened)
  • Maple Syrup
  • Chopped Celery
  • Chopped Green Pepper
  • Chopped Red Pepper
  • Sliced or Chopped Onion
  • Water Chestnuts
  • Snow Peas
  • Mung Bean Sprouts
  • Any other veggies you’d like

My Adaptations:

Since it’s just Hubby and I, I used just three boneless, skinless chicken breasts, chopped up. I also used a low sodium soy sauce. Since snow peas were expensive (almost $4 for a small bag) at our grocery store, I skipped those, but I did add in some of those little mini corns. I’m also curious how this dish would taste with regular pancake syrup instead of maple syrup, since maple syrup is expensive. I may try it sometime with honey too. I’m always looking for ways to make meals more inexpensive and healthier!

Brown the chicken pieces in a little bit of olive oil in a large wok or skillet. When the chicken is mostly cooked, add in the chopped veggies. The water chestnuts I bought were whole, but I sliced them in half before adding to the skillet. Saute the veggies and chicken until tender/crisp. At this point, you may want to add some salt and pepper.

Then add in 1/2 cup of maple syrup, 1 cup of drained pineapple chunks, and about 1/3 cup of soy sauce. I actually mixed these together in a separate bowl and then poured it into the pan. Simmer.

In a separate bowl, mix together 3 tbsp. of flour and 1/4 cup of water. If you have pineapple juice left, you can use that instead of water. Mix the flour and water/juice together until smooth, and then add to the pan.

Stir your dish until it thickens. I think I could’ve added more flour to it, since it was a little runny, but I don’t think it affected the taste at all.

Finally, serve over rice.

I almost always use brown rice instead of white, and I like to use my rice cooker…but I don’t always think about it enough ahead of time to get the rice into the cooker three hours before dinner! I try to have instant brown rice on hand for the days that I forget.

Hubby loved this, by the way, so I’ll definitely be making it again. There’s plenty for leftovers too!

Homemade Chicken Noodle Soup

Dinner tonight was another success! I’m usually never sure how it’s going to turn out, so I’m excited when I have another cooking success to put under my belt. I started off by following a chicken barley soup recipe, but when I went to put the barley in…I was out. This is pretty much typical of my cooking life (not having the right ingredients or messing things up), but fortunately I did have some multi-grain soup noodles on hand. Voila!

I love one-dish meals since they’re a great way to package vegetables when I’m tired of salads. One-dish meals are generally simple to put together as well. I break out my crockpot at least once a week!

I tweaked the recipe a little. I never use the full amount of stock that a recipe calls for, because it’s an incredible amount of sodium. I ended up doing four cups of chicken broth and two cups of water, but I think I could easily have done three cups of each.

1. Have you heard of Lush? I was introduced to Lush by a fellow Soldier when I was working for the Army Reserve in Orlando (great city for shopping, by the way). It’s a very, very addictive store. 2. Cloth diaper co-ops are a great way to save money when buying diapers. The co-op leader will purchase a large number of diapers for a cheaper wholesale price. You’ll have to pay for shipping and a co-op fee on the diaper(s), but you’ll still come off saving money compared to buying one or two diapers on your own for the full retail price.

There are other times when a co-op is great, as well. For example, Glow Bug Diapers are very popular right now, but they only sell their diapers in packs of 12. What if you just want one? Many co-ops right now are purchasing multiple packs of Glow Bug Diapers and splitting them up, allowing co-op members to buy just one or two individual diapers.

It helps you keep track of your workouts, your water intake, your weight, and it works as a calorie counter. You can also connect with friends on it to hold each other accountable. I’ve only been using it a couple of days, so I’ll wait a week or two before I do a full review. So far, I love it. I was a little depressed when I realized how big my portions are for all my meals. I’m going to be hungry all the time for a while until my appetite shrinks.

Annnnnnd that’s it for today! I kept busy with my sewing projects, diaper laundry, and kitchen cleaning. I made a fitted diaper out of a prefold, and I’ll share the results in a post once I’ve had the chance to test it on my son.
