Matcha Green Tea Muffins

I’ve heard many things recently about the benefits of matcha, or green tea powder. Matcha has several benefits like antioxidants, metabolism boost, and all-day energy. Knowing this, I was excited to receive a package of USDA organic matcha by Kiss Me Organics. Since the powder is culinary grade, this matcha works well in smoothies, lattes, and even baking!

Simple recipe for Matcha Green Tea Muffins on My Life: A Work in Progress

Here’s a simple recipe for muffins that I made with my matcha green tea powder.

Matcha Green Tea Muffins

Ingredients:

  • 1 2/3 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon Kiss Me Organics Matcha green tea powder
  • 1/2 cup white sugar
  • 1 egg
  • 1/3 cup melted butter
  • 1 cup milk

Directions:

  1. Preheat oven to 350 degrees Fahrenheit. Grease 12 muffin cups with butter.
  2. Whisk the dry ingredients together (flour, salt, baking powder, matcha, and sugar) and set to the side. In a separate bowl, whisk together the egg, melted butter, and milk. Stir the milk mixture into the flour mixture. Don’t over mix. You want it just moistened. Pour into your muffin tins.
  3. Bake in the preheated oven until golden and the tops spring back when lightly pressed. This will be about 20- 25 minutes. Rotate pan about half way through baking.
  4. Cool muffins in the tin for 5 minutes, then remove to cool on a wire rack or plate.

The muffins were actually quite tasty. I’m not a huge fan of the green tea aftertaste, but I would imagine anyone who drinks a lot of green tea would be used to it. I wouldn’t call it a bitter taste, just a “green tea” taste to it. I also tried mixing the powder with water, and that was a bad idea (gross). When I juice a bunch of vegetables, I can sneak it in just fine; I don’t even notice the taste.

I wasn’t sure how the all-day energy would work. I’m a big coffee drinker, and I usually have two or three cups a day. Tea has never been able to stand up to my coffee buzz, so I didn’t think the powder would either. It doesn’t, but I do get energy from it. Just eating a muffin at breakfast and drinking water gives me enough energy to get by until at least lunch time. It might give all-day energy to someone who’s not used to a ton of caffeine.

Overall I liked it, and I think it’d be fun to see what types of baking, etc., I can sneak it into (my friend showed me a homemade matcha ice cream recipe she’s going to try!), but it won’t replace my daily coffee for me. Kiss Me Organics does have a free PDF recipe book, which is pretty neat.
