Baked Pancakes = Genius Idea

I can’t believe I never thought of this! This Saturday we attended a birthday party for my nephews, and my SIL always does a fantastic job on the food and decorations. She served up baked pancakes, and the idea blew me away. Hubby likes pancakes. I like pancakes. But I don’t like making pancakes. I can usually only make two at a time in my skillet. I’m terrible at flipping them, and they usually end up lopsided and weird-looking, or just plain burnt.

Baking pancakes is such a simple, quick idea! Pour your batter into a greased pan, pop in the oven at 425°, and bake for about 25 minutes (time is just an estimate, and my oven sucks, so make sure you check). When a toothpick poked into the center comes out clean, it’s done!

  1. I do these too since a Finnish friend introduced me to them. Try the Finnish version with a VERY thin batter and then melt LOTS of butter in the baking pan before pouring the batter over. It will puff up really high while baking and then flatten done after the pan is out of the oven. Yes, it is really good and really easy.
